Arugula, Pesto & Goat Cheese Pizza

Preheat oven according to instructions on a package of prepared pizza crust. Spread 6 tablespoons prepared pesto on top of one unbaked pizza crust. Cut an 8-ounce package of goat cheese into thick coins and crumble over the pesto. Thinly slice 3 Roma tomatoes and arrange over the goat cheese, then sprinkle with 2 cloves of peeled, thinly sliced garlic.

Brush the edges of the crust lightly with olive oil and place directly on the middle rack of the oven. Bake for 5 to 10 minutes, or until the edges are golden. Remove from oven and cool for a few minutes, and then top with 1 cup fresh arugula.

Serves 8.
