Asian Sugar Snap Pea & Noodle Salad with Napa Cabbage

This is an easy recipe to adapt to what you have on hand. Substitute whole wheat pasta for the soba or radishes for the red pepper. Use your own home-cooked chicken and/or homemade Asian-flavored salad dressing. For the toppings, try garlic scapes instead of onions and toasted slivered almonds instead of sesame seeds.

3 ounces uncooked soba (buckwheat noodles)
8 ounces sugar snap peas
1 red bell pepper, thinly sliced
3 cups shredded lemon-pepper rotisserie chicken
1/2 cup light sesame-ginger dressing (such as Newman’s Own brand)
toasted sesame seeds (optional)
sliced greens onions (optional)
shredded napa cabbage

Prepare soba according to package directions. Drain. While soba cooks, microwave peas, covered, on high for 1 minute. Combine soba, peas, red pepper, chicken and

dressing. Toss to combine. Serve on top of shredded napa cabbage and garnish with sesame seeds and onions, if desired.
