Basil Omelet Filled with Greens & Ricotta

No measurements are provided here. Determine the amount of the vegetables and cheese based on your taste.

Finely chop or shred cooking greens, such as kale, Swiss chard or radicchio. Sauté
the greens in olive oil until tender, along with finely chopped shallots or onions and a bit of minced garlic. Season with salt and pepper or to taste. Set aside to cool before stirring in some ricotta cheese.

Finely chop fresh basil and add to your favorite omelet recipe. Prepare the omelet as usual. Just before the eggs are fully cooked in the middle, add a dollop or two of the greens mixture to one side of the omelet. Fold one half of the omelet over the other and turn out onto the serving plate.
